Island Chicken Scampi Recipe - Cooking Index
1/2 cup | 99g / 3.5oz | Butter |
1 1/2 lbs | 681g / 24oz | Boneless - skinless chicken breasts, cut into strips |
5 | Garlic cloves - minced | |
1/2 teaspoon | 2.5ml | Cayenne pepper |
1/2 teaspoon | 2.5ml | Salt |
1 | Orange - juice of | |
1 | Lemon - juice of | |
1 | Lime - juice of | |
1 tablespoon | 15ml | Chopped fresh parsley |
In a large skillet, melt the butter over medium heat. Add the chicken, garlic, cayenne pepper, and salt and cook for 5 to 6 minutes, or until no pink remains in the chicken, stirring occasionally. Add the orange, lemon and lime juices and cook for 1 to 2 minutes, or until the sauce thickens slightly. Sprinkle with the parsley, toss and serve.
