Recipe Ingredients

1/4 cup 59mlChicken broth - (hot)
1 teaspoon 5mlDark corn syrup - or
  Molasses
2 tablespoons 30mlSoy sauce
3 tablespoons 45mlVegetable oil
4   Chicken breast halves --
  Diced
1   Onion - chopped (small)
1   Red pepper - chopped (small)
1 teaspoon 5mlGinger - ground
  Crushed red pepper
2 teaspoons 10mlCurry powder
3 cups 480g / 16ozCooked rice - cold
1/2 cup 73g / 2.6ozPeanuts - chopped
1/4 cup 23g / 0.8ozScallions - minced
1/4 cup 23g / 0.8ozParsley - minced

Recipe Instructions

Mix broth, corn syrup, and soy sauce. Stir fry chicken in hot oil.

Add onion, red pepper, ginger, and crushed red pepper and cook 30 seconds. Stir in curry powder and rice and cook for 1 minutes. Add liquids. Stir in peanuts, scallions, and parsley and heat.
