Herbed Lime Chicken Recipe - Cooking Index
1 lb | 454g / 16oz | Chicken pieces |
1/2 cup | 118ml | Vegetable oil |
1/3 cup | 78ml | Lime juice |
1/4 cup | 15g / 0.5oz | Onion - chopped |
2 | Garlic - crushed | |
1 teaspoon | 5ml | Tabasco sauce - ** |
3/4 teaspoon | 3.8ml | Dried rosemary - crumbled |
1/2 teaspoon | 2.5ml | Dried marjoram - crumbled |
1/2 teaspoon | 2.5ml | Salt |
Pierce chicken in several places with a fork. In a shallow dish or plastic bag, combine chicken and remaining ingredients. Cover. Refrigerate overnight in lime mixture. Drain chicken; reserve marinade. Place chicken over hot coals. Cook about 20 minutes per side or until chicken is done. Turn chicken several times during grilling, brushing with reserved marinade each time. Serve with additional TABASCO sauce, if desired.
**May lessen or add TABASCO sauce depending on tastes.
