Herb-Rubbed Grilled Chicken Recipe - Cooking Index
4 lbs | 1816g / 64oz | Chicken - cut up |
2 lbs | 908g / 32oz | Garlic cloves - crushed (large) |
5 tablespoons | 75ml | Sage - fresh, chopped or |
2 1/2 tablespoons | 37ml | Sage - dried, crushed |
1 tablespoon | 15ml | Dry mustard |
2 | Lemons - zest of | |
1/2 teaspoon | 2.5ml | Kosher salt - (to taste) |
Freshly ground black pepper |
1) Wash and dry chicken pieces.
2) prepare grill.
3) Rub the outside of each chicken piece with the crushed garlic.
4) In a glass bowl, add remaining ingredients and mix well.
5) Rub each chicken piece with the herb mixture, leaving as much as possible on the outside of the chicken.
6) Grill using indirect method until internal temperature of breast is at 160F.
7) Serve wit lemon and lime wedges.
