Avocado & Orange Salad With Walnuts

Recipe Ingredients

1/4 cup 36g / 1.3ozWalnuts - chopped
1 cup 237mlSweet orange - sectioned (small)
1/2 cup 73g / 2.6ozFirm ripe avocado - diced (medium)
1/2 cup 73g / 2.6ozTurnip - diced
  Red leaf lettuce - torn, - as needed
  Dressing
1 1/2 tablespoons 22mlWalnut oil -=or=- Peanut oil
  Peanut oil
1/2 tablespoon 7.5mlLemon juice -=or=- Lime juice - to taste
1/2 teaspoon 2.5mlMint
1/2 teaspoon 2.5mlHoney
  Black pepper - to taste

Recipe Instructions

Toast walnuts on a hot, dry skillet, stirring frequently, until they are fragrant. About 8 to 10 minutes. Remove from heat & let cool.

Combine salad ingredients in a serving bowl & toss with the walnuts. In a small bowl, stir together the dressing ingredients. Pour over the salad & toss to coat. Serve at once.
