2 cups | 474ml | Seedless grapes |
2 cups | 125g / 4.4oz | Cooked chicken breast - cubed |
2 cups | 474ml | Thinly sliced sweet red pepper |
1/2 cup | 118ml | Chinese pea pods - diagonally sliced |
3 tablespoons | 45ml | Toasted slivered almonds |
2 tablespoons | 30ml | Chopped green onions |
Creamy Herb Dressing | ||
1/4 cup | 59ml | Low fat mayonnaise |
1/4 cup | 59ml | Plain low fat yogurt |
1 teaspoon | 5ml | Salt |
1/2 teaspoon | 2.5ml | Dijon-style mustard |
1/2 teaspoon | 2.5ml | Dried tarragon |
1/2 teaspoon | 2.5ml | Dried thyme |
1/8 teaspoon | 0.6ml | Ground pepper |
1/8 teaspoon | 0.6ml | Dried rosemary |
Combine grapes, chicken, peppers, pea pods, almonds and onions. Toss with Creamy Herb Dressing. Serves 6.
Creamy Herb Dressing: Combine mayonnaise and plain low fat yogurt with salt and mustard. Crushed or rub the dried herbs as they get added to the bowl. Mix well. Makes 1/2 cup.
