Golden Chicken Nuggets

Here is a nutritious and easy version of a fast-food favorite. Because it is very soft (rather than crispy), it is especially good for young children.

Serves: 2 people

Recipe Ingredients

2 teaspoons 10mlVegetable oil
1/4 cup 59mlPlain low fat yogurt
1/2 cup 118mlDry baby oatmeal with bananas
1/2 teaspoon 2.5mlHerb seasoning
1   Boneless skinless chicken breast - cut bite-size pieces

Recipe Instructions

Preheat oven to 400 degrees. Use 1/2 teaspoon oil to grease a baking sheet.

Place yogurt in a shallow dish. In another shallow dish, mix dry baby oatmeal and herb seasoning.

Coat chicken with yogurt, then roll in seasoned oatmeal.

Place chicken on prepared pan. Sprinkle with remaining oil.

Bake for 10 minutes, until cooked through. This recipe serves 2 to 3.
