Auntie Mae's Oyster-Shrimp Gumbo

Recipe Ingredients

1 lb 454g / 16ozMedium shrimp - (20-25/lb)
2   Shucked raw oysters
  Salt to taste
1/3 cup 53g / 1.9ozWhite rice - (uncooked)
2 cups 474mlSliced - (1/4" thick) okra
1 cup 62g / 2.2ozStewed tomatoes
2   Garlic minced
2   Onions chopped (medium)
1/4 cup 59mlSauterne wine
4 tablespoons 60mlBacon grease
1 teaspoon 5mlTabasco sauce
3   Bay leaves
2 tablespoons 30mlFile powder or New Orleans crab boil (in a small cloth bag)
  A pinch of ground dill
1 cup 110g / 3.9ozSliced carrot
1 teaspoon 5mlWorcestershire sauce
1/3 cup 36g / 1.3ozChopped celery
1/2 cup 73g / 2.6ozChopped green bell pepper
1/3 cup 78mlCorn or peanut oil
5   Water
1/2 cup 73g / 2.6ozFinely diced ham

Recipe Instructions

Saute' the onions, Bell peppers, garlic, and celery in the bacon grease. Add to the water which you should then bring to a boil. Add the okra, ham, oysters, and shrimp and boil for 5 minutes.

Add the other ingredients now and cook until the rice is done. Sever in soup bowls or over more rice. This is an epicurean experience that cannot be duplicated anywhere except where it is cooked.

The meats may be changed to crab & shrimp or crab & oysters, or Turkey and Ham, or chicken & shrimp, or what ever!
