Bearnaise Sauce - Lite

Recipe Ingredients

2 oz 56gThinly sliced shallots - (1/2 cup)
3 tablespoons 45mlDry white wine
2 tablespoons 30mlWhite wine vinegar
1 teaspoon 5mlDried tarragon
1   Salt
1   Pepper
2/3 cup 157mlLow-fat sour cream

Recipe Instructions

Combine the first 6 ingredients in a small, heavy saucepan; bring to a boil, and cook 1 minute. Strain mixture, reserving liquid; discard solids. Return liquid to saucepan; stir in sour cream. Place over low heat, and cook 1 minute or until warm, stirring frequently.

Yield: 3/4 cup (serving size: 3 tablespoons).
