Recipe Ingredients

1 1/4 cups 296mlBulgur (cracked wheat)
  Uncooked
1 1/4 cups 296mlBoiling water
2 cups 125g / 4.4ozTomato - unpeeled diced
1 cup 237mlCucumber - peeled, seeded,
  Diced
3/4 cup 109g / 3.8ozFresh parsley - chopped
1/2 cup 73g / 2.6ozYellow bell pepper - diced
1/2 cup 31g / 1.1ozGreen onion - sliced
2 tablespoons 30mlFresh mint - chopped
1/2 teaspoon 2.5mlSalt
1/3 cup 78mlFresh lemon juice
2 tablespoons 30mlOlive oil

Recipe Instructions

Combine bulgur and boiling water in large bowl; stir well.

Let stand 30 minutes or until water is absorbed.

Add tomato and remaining ingredients; toss.

Serving Ideas : Serve at room temperature or chilled.
