Recipe Ingredients

100   Coriander seeds
50   Cumin seeds
25   Black peppercorns or green peppercorns
25   Cinnamon sticks
25   Cloves
25   Green cardamom seeds
25   Black cardamom seeds
5   Curry leaves - (to 6)
2 teaspoons 10mlFennel seeds
10   Nutmeg

Recipe Instructions

Preheat oven to 100 C. Mix all ingredients except nutmeg in a frying pan. Roast them in the oven. Do not let them turn brown. Put aside until cool. Blend cooled and roasted spices at high speed for 2-3 minutes until completely pulverized. Add nutmeg and mix well.

Makes approx. 1 1/2 cups
