Brunswick Stew (mixed game)

Recipe Ingredients

  Mixed small game equivalent to 2 squirrels
  (or use 2 young squirrels)
1   Onion - sliced (large)
1/2 lb 227g / 8ozLean ham - diced
3   Water
6 cups 375g / 13ozTomatoes
2 cups 320g / 11ozLima beans
4 cups 584g / 20ozPotatoes - diced (large)
2 cups 125g / 4.4ozGrated corn
1 tablespoon 15mlSalt
1/4 teaspoon 1.3mlFreshly-ground black pepper
1 teaspoon 5mlHot red pepper pod (small)
6 tablespoons 90mlButter

Recipe Instructions

Simmer game meat, onion, and ham gently in water for 2 hours. Add tomatoes, limas, potatoes, corn, salt, black pepper, and hot pepper pod; cover and simmer gently for 1 hour, stirring occasionally. Add butter and serve as soon as it melts.
