Erdine's Fish Pie

Recipe Ingredients

1 lb 454g / 16ozFish fillet - cooked
1/2 teaspoon 2.5mlSalt
1 cup 237mlPeas - canned or frozen
1 tablespoon 15mlOnion - minced
1 tablespoon 15mlGreen pepper - minced
2 cups 474mlMashed potato - seasoned
  Sauce
2 tablespoons 30mlButter or margarine
2 tablespoons 30mlFlour
1/2 teaspoon 2.5mlSalt
1/8 teaspoon 0.6mlPepper
1 cup 237mlMilk or - half milk and half
  Liquid

Recipe Instructions

Poach the fish in a small amount of water; flake the fish.

Make a white sauce with the butter, flour, salt, pepper and milk. Cook until smooth and thickened.

In a buttered casserole, combine the fish, salt, peas, onion, green pepper and white sauce; cover with a layer of mashed potato seasoned with 1/4 cup of butter, 1/2 cup milk, salt and pepper. Bake in a hot oven, 400F F., for 25 minutes, or until hot and bubbly.
