Curry Powder - Martha Stewart Living

Recipe Ingredients

2 tablespoons 30mlCoriander seeds
1 tablespoon 15mlCumin seeds
1/2 tablespoon 7.5mlMustard seeds
1 tablespoon 15mlFenugreek seeds
4 tablespoons 60mlDried red chiles (small)
1 tablespoon 15mlPeppercorns
10   Fresh or dried curry leaves - optional
1/2 tablespoon 7.5mlGround ginger
1 tablespoon 15mlGround turmeric

Recipe Instructions

1. Place all the seeds together in a saute pan over medium heat and dry-roast, shaking pan often, until they give off an aroma, about 5 minutes. 2. Combine all ingredients in a mortar or a clean coffee grinder and grind to a powder. Store in an airtight container.
