Butter Beans With Mint And Tomatoes

Recipe Ingredients

1 lb 454g / 16ozButter beans - cooked
2   Garlic - crushed
14 oz 397gCanned tomatoes
3 oz 85gOnions - finely chopped (large)
1/4   Vegetable stock - condensed
2 tablespoons 30mlFresh mint
  OR 1 tbs dry mint

Recipe Instructions

Saute onions and garlic in a little of the stock until starting to soften.

Add the tomatoes and the cooked beans and the mint. Season to taste.

Simmer gently, covered, for about 20 minutes to allow the flavors to blend.
