Chipotle Tomatillo Salsa - 3 Recipe - Cooking Index
|2||Chipotle chiles - dried|
|1 cup||237ml||Hot water|
|6 cups||1422ml||Tomatillos - husked, washed (medium) sliced, roasted|
|1||White onion - sliced (medium)|
|6||Garlic - chopped|
|1/4 cup||4g / 0.1oz||Fresh cilantro - chopped|
|1/4 teaspoon||1.3ml||Salt - to taste|
Toast chiles in heavy skillet over medium heat until brown and fragrant, about 3 minutes.
Cool slightly, slit open, and remove seeds. Sautee onion and garlic until lightly brown.
In a small bowl toss chiles with the hot water and soak for 10 minutes.
Put all ingredients in a blender. Process at high speed until you have a slightly textured liquid.
Makes approx 2 1/2 cups.
