Low-Fat Savory Fresh Peach Salad (2 PTS)

Recipe Ingredients

1   Plain nonfat yogurt
2   Fresh lemon juice
2   Honey
1   Dijon mustard
2   Fresh peaches - peeled and chopped (large)
1   Celery stalk - chopped
1   Minced fresh parsley
1   Minced fresh cilantro
2   Minced onions
4   Dried apricots - minced

Recipe Instructions

In a small bowl or measuring cup, combine the yogurt, lemon juice, honey and

mustard.

In a large mixing bowl, toss together the peaches, celery, sesame seeds,

parsley, cilantro, onions, and apricots. Add the yogurt mixture and toss

again. Chill for at least 3 hours before serving.
