Bean Casserole (4 PTS)

Recipe Ingredients

6 3/4 oz 191gGreat northern beans - soaked overnight
1 cup 237mlBoiling water
2 oz 56gKielbasa - cut into 1/2" cubes
1 cup 62g / 2.2ozChopped onion
1/2 cup 55g / 1.9ozChopped carrots
2 cups 186g / 6.6ozGarlic cloves - minced (large)
2   Skinless chicken thighs
2 cups 125g / 4.4ozStewed tomatoes
1/4 cup 27g / 1ozChopped celery
1/2 teaspoon 2.5mlDried marjoram
1/2 teaspoon 2.5mlBlack pepper
1/4 teaspoon 1.3mlDried sage
1   Bay leaf
1/8 teaspoon 0.6mlGround cloves
1/4 cup 23g / 0.8ozMinced parsley
1/2 teaspoon 2.5mlSalt

Recipe Instructions

In slow cooker, combine beans and boiling water. Cover and set aside.

Place medium nonstick skillet over medium heat. Add sausage and saute

until lightly browned, 4-5 minutes.

Add onion, carrot and garlic; saute until garlic is golden, about 4

minutes.

Combine sausage mixture, chicken, tomatoes, celery, marjoram, pepper,

sage, bay leaf and cloves with beans in the cooker; set on low and cook

10-12 hours. Stir in parsley and salt just before serving.

Serving (1 1/2 cups) provides: 1 1/4 veg, 1 pro, 1 1/2 bread.
