| 1 lb | 454g / 16oz | Potatoes - (3 medium) |
| 1 | Spam luncheon meat - (7 oz) - diced | |
| 1/2 cup | 73g / 2.6oz | Chopped fresh parsley |
| 1 | Garlic clove - minced | |
| 2 tablespoons | 30ml | Grated Parmesan cheese - divided |
| Freshly-ground black pepper - to taste | ||
| 1 | Egg yolk |
Cook potatoes in small amount boiling salted water until tender; drain. Mash potatoes well; mix in Spam, parsley, garlic, 1 tablespoon cheese, pepper, and egg yolk.
Spread mixture in lightly-greased 1-quart baking dish. Sprinkle with remaining cheese. Bake in 425 degree oven 15 minutes. Place under broiler to brown, if desired.
