California Gingered Fruit Salsa Sundaes

Recipe Ingredients

1/2 cup 118mlRaspberries
2 tablespoons 30mlSugar
3 tablespoons 45mlMinced crystallized ginger - (to 4 tbspns) - or to taste
1 tablespoon 15mlFirm-ripe mango - diced fine, (small)
  (abt 2/3 cup)
6   Strawberries - diced fine (large)
1/2 cup 73g / 2.6ozFinely-diced fresh pineapple
1/2 teaspoon 2.5mlBalsamic vinegar
1   Super-premium vanilla frozen yogurt

Recipe Instructions

In a bowl, crush raspberries coarsely with sugar and let stand 5 minutes. Stir in ginger, mango, strawberries, pineapple, and vinegar. Scoop frozen yogurt into 4 sundae dishes and spoon salsa over it.

This recipe yields 4 servings.
