Oven Fries With Herbes De Provence

Recipe Ingredients

3   All-purpose potatoes - scrubbed, dried
2 tablespoons 30mlExtra-virgin olive oil - for drizzling
1 tablespoon 15mlDried herbes de Provence - plus
1 teaspoon 5mlDried herbes de Provence
  = (or 1 tspn each dried parsley, sage,
  Rosemary, and thyme)
  Salt - to taste

Recipe Instructions

Preheat oven to 500 degrees.

Cut potatoes into thin wedges and place on a cookie sheet. Coat potatoes in a thin layer of olive oil, then sprinkle very liberally with 2 palm fulls of herbes. Toss potatoes to coat evenly.

Roast potatoes 25 minutes, until crisp and golden at edges. Season hot wedges with salt to your taste.

This recipe yields 4 servings.
