4   Italian peasant bread, 1" thick - grilled
  Ceci Bean Bruschetta
1 cup 160g / 5.6ozCooked ceci beans (chickpeas)
4 tablespoons 60mlExtra-virgin olive oil
2 tablespoons 30mlBlack olive paste
2 tablespoons 30mlBalsamic vinegar
1/2 teaspoon 2.5mlHot red pepper flakes
1/2 teaspoon 2.5mlChopped fresh rosemary
2 tablespoons 30mlBasil leaves chiffonade

2   Red ripe tomatoes - seeded, and
  Finely chopped
4   Basil leaves - cut into chiffonade
2   Garlic cloves - thinly sliced
2 tablespoons 30mlExtra-virgin olive oil
1 tablespoon 15mlBalsamic vinegar
  Salt - to taste
  Freshly-ground black pepper - to taste
4   Italian peasant bread, 1" thick - grilled
  Mackerel Bruschetta
1 cup 160g / 5.6ozCooked canellini beans
1   Cooked mackerel in olive oil - (6 oz)
4 tablespoons 60mlExtra-virgin olive oil
2 tablespoons 30mlRed wine vinegar
1/2   Red onion - finely chopped
1/2 teaspoon 2.5mlHot red pepper flakes
1/2 teaspoon 2.5mlChopped fresh rosemary
2 tablespoons 30mlBasil leaves chiffonade
  = (cut in narrow ribbons)
1   Garlic clove - thinly sliced
  Salt - to taste
  Freshly-ground black pepper - to taste
4   Italian peasant bread, 1" thick - grilled

Recipe Instructions

For each respective variation, combine all ingredients (except bread), seasoning each batch with salt and pepper, to taste. Spoon some of the mixture onto the bread, drizzle with high-quality extra-virgin olive oil and serve immediately.
