|3 cups||711ml||Peanut oil|
|4 cups||948ml||Potatoes - gaufrette cut (large)|
|1/2 cup||118ml||Ancho chile powder|
|Salt - to taste|
Heat oil to 375 degrees. Fry potatoes, in batches and drain on paper towels. Immediately toss with ancho powder and salt.
