Creamy Tarragon Dip

This dip resembles a French boursin; it's especially good if you refrigerate it for 1 to 2 hours before serving to let the flavors blend.

2 teaspoons 10mlFresh tarragon
  = (or 1 tspn dried tarragon)
2 teaspoons 10mlMinced scallions
2 teaspoons 10mlMinced parsley
1 cup 146g / 5.1ozLow-fat cottage cheese
2 tablespoons 30mlTarragon vinegar
2 tablespoons 30mlLow-fat cream cheese - softened
1 teaspoon 5mlDijon mustard

Recipe Instructions

Combine all the ingredients in a food processor and process until smooth. Refrigerate until guests arrive; serve with raw vegetables or crackers.
