Jerk Turkey Salad

Recipe Ingredients

6 oz 170gTurkey breast tenderloin
1 1/2 teaspoons 7.5mlCaribbean jerk seasoning
4 cups 440g / 15ozPackaged mixed salad greens
3/4 cup 177mlSliced peeled cucumber
2/3 cup 97g / 3.4ozChopped fresh pineapple
2/3 cup 157mlQuartered strawberries
  = (or raspberries)
1/2 cup 118mlSlivered peeled jicama
  = (or sliced celery)
1   Green onion - sliced
1/4 cup 59mlLime juice
3 tablespoons 45mlHoney

Recipe Instructions

Prepare grill for direct grilling. Rub turkey with jerk seasoning.

Grill turkey over medium coals 15 to 20 minutes or until turkey is no longer pink and juices run clear, turning once. Remove from grill and cool.

Cut turkey into bite-size pieces. Toss together greens, turkey, cucumber, pineapple, strawberries, jicama and green onion.

Combine lime juice and honey. Toss with greens mixture. Serve immediately.

This recipe yields 2 servings.
