Grilled Fish With Pineapple-Cilantro Sauce

Pineapple-Cilantro Sauce is also excellent served with pork or lamb.

Recipe Ingredients

1   Pineapple - (abt 2 lbs) - peeled, cored, (medium)
  And cut into scant 1" chunks
3/4 cup 177mlUnsweetened pineapple juice
2 tablespoons 30mlLime juice
2   Garlic cloves - minced
1/2 teaspoon 2.5mlMinced jalapeño pepper - (to 1)
2 tablespoons 30mlMinced cilantro
2 tablespoons 30mlCold water
1 tablespoon 15mlCornstarch
1 teaspoon 5mlEqual For Recipes - (to 1 1/2)
  = (or 3 to 4 packets Equal sweetener
  Or 2 to 3 tbspns Equal Spoonful)
  Salt - to taste
  Freshly-ground black pepper - to taste
6   Halibut, haddock or salmon
  Steaks or fillets - (abt 4 oz ea) - grilled

Recipe Instructions

Heat pineapple, pineapple juice, lime juice, garlic and jalapeño pepper to boiling in medium saucepan. Reduce heat and simmer, uncovered, 5 minutes. Stir in cilantro; heat to boiling.

Mix cold water and cornstarch; stir into boiling mixture. Boil, stirring constantly, until thickened. Remove from heat; cool 2 to 3 minutes. Stir in Equal; season to taste with salt and pepper. Serve warm sauce over fish.

This recipe yields 6 servings.
