Arugula Salad With, Oranges, Pomegranate Seeds, Goat Cheese

Dried cranberries can be used in place of the pomegranate seeds in this recipe.

Recipe Ingredients

3/4 cup 177mlExtra-virgin olive oil
1/4 cup 59mlFresh lemon juice
2 tablespoons 30mlThawed frozen orange juice concentrate
3/4 teaspoon 3.8mlCoarse salt
1/2 teaspoon 2.5mlFreshly-ground black pepper
5   Oranges
14 oz 397gArugula - (abt 16 cups)
3/4 cup 82g / 2.9ozPomegranate seeds = (or dried cranberries)
1   Soft fresh goat cheese - (5.5 oz) - crumbled
1/3 cup 20g / 0.7ozFinely-chopped red onion

Recipe Instructions

Whisk first 5 ingredients in bowl to blend. (Can be made 1 day ahead. Chill. Bring to room temperature and rewhisk before using.)

Cut off peel and white pith from oranges. Cut oranges into 1/4- to 1/2-inch-thick rounds. Cut each round into quarters. Transfer orange pieces to large bowl. Add remaining ingredients and toss to combine. Toss salad with enough dressing to coat and serve.
