Apple Gingered Fish

Recipe Ingredients

1 lb 454g / 16ozOrange roughy or salmon fillets
1/2 cup 118mlApple cider or apple juice
1/2 teaspoon 2.5mlMinced garlic
1/2 teaspoon 2.5mlGrated fresh gingerroot
  Apple Relish
1 cup 146g / 5.1ozDiced red apple
1/2 cup 73g / 2.6ozDiced mango
1   Sliced quartered kiwi
1/4 cup 59mlSweet and sour sauce
1 tablespoon 15mlChopped parsley
1/4 teaspoon 1.3mlGrated fresh gingerroot

Recipe Instructions

Wash fish and cut into serving pieces. Combine apple cider, garlic and 1/2 teaspoon gingerroot. Place cider mixture and fish in an airtight container or plastic bag and refrigerate for 1 hour.

While fish is marinating, in a small bowl, combine relish ingredients. Cover and refrigerate.  Grill or broil fish until it flakes and is done. Serve hot with Apple Relish.
