Gibson's Roasting Salt

Recipe Ingredients

1/2 cup 118mlKosher salt
1 tablespoon 15mlDried basil
1 tablespoon 15mlCoarsely ground black pepper - (fresh!)
2   Bay leaves - broken into pieces
2 1/4 teaspoons 11mlGarlic powder
2 1/4 teaspoons 11mlDried thyme
1/8 teaspoon 0.6mlCayenne pepper

Recipe Instructions

Actually, I've never made this exact recipe because I like more kick, so I increase the garlic and the cayenne (1tbl is a nice round number).

Just coat the ribs liberally with the rub and pitch them on the pit for 6 hours (or thereabouts) at 250.
