Alaska Cod With Greek Walnut Salsa

Recipe Ingredients

6   Cod fillets - (6 oz ea) - thawed
  Salt - to taste
  Freshly-ground black pepper - to taste
  Oil - as needed
  Greek Walnut Salsa
1 1/4 cups 78g / 2.8ozFinely-chopped tomatoes
1/2 cup 73g / 2.6ozFinely-chopped cucumbers
2 tablespoons 30mlFinely-chopped olives
2 tablespoons 30mlFinely-chopped red onions
1 tablespoon 15mlLemon juice
1 teaspoon 5mlOlive oil
1 teaspoon 5mlChopped fresh parsley
1/4 teaspoon 1.3mlMinced garlic
1 pinch  Dried oregano
1/4 cup 36g / 1.3ozChopped walnuts - toasted

Recipe Instructions

Season cod fillets with salt and pepper. Saute in oil in a non-stick or heavy saute pan over medium-high heat until fish just flakes when tested with a fork.

To serve, divide cod between serving plates and top evenly with salsa.

Greek Walnut Salsa: Mix together all ingredients except walnuts until well combined. Season with salt and pepper; stir in walnuts just before serving.
