1 lb | 454g / 16oz | Butter or margarine |
2 cups | 320g / 11oz | Brown Sugar |
1 | Egg | |
2 tablespoons | 30ml | Cinnamon |
1 teaspoon | 5ml | Cardamom |
1 teaspoon | 5ml | Vanilla |
4 cups | 792g / 27oz | Soda |
1 cup | 62g / 2.2oz | Flour (approx.) Enough to make real stiff dough. |
Chopped Almonds or Walnuts (for topping) |
Cream together all ingredients except flour. Add flour until dough becomes very stiff. Shape into round balls (3/4 - 1 inch dia.) and flatten in your hand. Beat a second egg and carefully dip the top of the cookie in the egg, then in the chopped nuts. We mix coloured sugar with the chopped nuts for added colour. Bake at 375 degrees F. for about 10 minutes or until the bottoms brown slightly.
